Your server got lag/delays that why you don't see a proper response when using the ships. I'm recommended you put 13GB+ on your server start up. I noticed 9-12GB ram on server have 3-5 seconds delays.

In guardian version, you can't actually used any ships like carrack, galleass, or caravel.It always said there is already rider on the mount. But you can use others ships like frigate and epheria sailboat..

True, it's already on the patch 1.01. the guys above should be specific on which boats are he was having issue with. Some boat/ships got fixed and some aren't. We just need to wait.

The patch is on page 16 under Ledie responded to a guy's problems. Keep in mind the patch still in development. They will probably updates more fixes.

you are missing a class called com.sun.javafx.binding.StringFormatter
Looks like you are running a version of java > 8 (ir is java 14 iirc). java > version 10 do not include javafx. You have to install it separately.
