how to remove clanwar maps
and choose only 1 ?

It's automatically designed to choose a certain number of maps for clan war , therefore you'll have to overwrite it to load one only.

In your GunZ Server , the clan war system core is designed to load a number of maps for clanwar only , So to make it load only one map you will need a C++ hook to overwrite the current settings to make it do only 1 map. No deletion of files are needed.
