I want to eliminate the requirements of abilities of the mounts.

For example to ride undead horse needs the ability to ride non dead horse and I want to remove it. Is it possible?

this is not possible using mount with stratholme or with karazhan.

just look in your item_template table. there's a column in there that states what skill is needed. can't remember the name off the top of my head, and I have no access to a DB atm, but you'll know it when you see it.
