Which Free Mail Server do you recommend for Windows and XAMPP and why?

Also, I'd recommend setting up Apache and MySQL individually rather than using XAMPP.

The person that wants the system, wants me to build it on XAMPP so I must use it.

I tried Mercury, but I couldn't manage to set it up, there were some errors that I tried to fix but never came to the solution.

Easier to spend $5/mo on a 1gb Linux VPS to install all this on. You're already using xampp so you're already using software which can all be installed in 10 seconds on something like centos via yum.
