You dont have to as you're using MySQL on both of the servers...
Uninstall Xampp and then install IIS assuming that you upgrade it.

Note that your database is not related to Xampp or IIS or any other site hosting software.
You got MySQL with Xampp as it was a complete pack of most used stuff to host your site.

Here is an easy tip: Export the database, and save it to somewhere and delete xampp, and install IIS7 and import the database again.

I found an easy way! I use xampp mysql for the iis database works fine
