How to add new files for update like changes in gui file. I double click the patches and then data,texture and sounds folder appeard. I placed the gui folder inside data folder for some changes but then after i run the client it did not update mu gui files inside my client.

Please make some advice maybe i missed something. Do i need to repack the data folder? How?

check this tutorial, make sure to make the patch in your patch folder.
