Depends what type of server you want to run, atm there is really only 2 types around, the china 144 and the ubuntu dedicated.
The china runs on colinux, i would look on google for setting up a colinux machine or vice versa the ubuntu machine..plenty of info out there. My personal opinion is to go with a ubuntu setup. If you cant manage then try a 136 setup first to get the "feel" for setting a server as these servers have guides and good helpful posts to reflect on
