All you need to do is extract the tier 2 models and BLPs from a higher version, and also extract the itemdisplayinfo.dbc, then put them in their respective folders in World of Warcraft\Data\
EDIT: I'll make a patch MPQ for ya and UL it in a bit.

That has all Tier 2 and Tier 3 gear in it, along with the itemdisplayinfo.dbc, and the itemset.dbc. Put it in World of Warcraft\Data\
