Centos 5 will work but the whole DVD is not necessary. You can get away with just CD1 and CD2 for a minimal install with desktop which is a smaller download, in fact you can get away with just CD1 if you can live without a desktop.

Honestly, thats the best way to go about the server side. All you need is a CLI, no need for a desktop. Also helps lower security risks by not running un-needed processes. You can do just about everything via WinSCP and putty.
