If I sell my Rockband on eBay, and someone pays, and I ship it, what happens if they get their money back from Paypal?

They can't, as long as you have a proof of purchase or somewhat a log of transaction, presumably. I'm not experienced on selling items @ ebay.
Make sure you sell to someone who has a good feedback, also i'm pretty sure eBay has a policy against people making chargebacks. Just make sure you have the money first before you send it, once you have the money in your account they cannot take it back.
