For my first play-through I choose Soldier, because I liked being able to choose all the weapons in the game and it was fun, maybe a bit easy mode though.
After I did a play-through of ME1, I choose Vanguard for my second play-through and having your own powers is very nice although I thought they were a bit underpowered when playing in veteran difficulty, having only a pistol also is a bit boring as the variety of new weapons can only really be experienced as a solider. Although later in the game you get to learn a new weapon type which after that, vanguard got REALLY fun.
So really to end, you can play the game as any class, just pick something that appeals to you. Vanguard seemed very nice to me as I picked the same class for my fem-shep in ME1 so I wanted to keep on that class.

I went for the Sentinel and so far it's been pretty fun. I liked the option of having biotic powers and tech powers. Maybe if I choose to play a second time, I'll choose vanguard.

Chose the Infiltrator... OP class with that boom cannon whatchamacallit sniper wep you get when you're halfway through the game, and a ammo specialisation combined with that. 1-2 most things with it.

super mario galaxy, halo 3 to a point, GTA4, megaman 9 and others :P
on topic, first playthrough is always soldier for me... if i go in for a second its usually chosen at random :P
