Weapon category as in Theif, Warrior etc? You'd have to change it's reqJob property. Play around with it. Warrior's value is 1, so if you wan t it to be a weapon for only Warriors, change that specific weapon's reqJob value to 1.

You should be able to find the values for all the other jobs by yourself.

Not sure about this, but I did a quick check, and it should be the weapons sfx property. It appears that one handed swords are 'swordS' and axes are 'swordL'.
You'll have to find a weapon with the same category you have in mind, and use it's value. Other than swords, it seems pretty straightforward. Maces are infact 'maces' and Bows have an sfx value of 'bow' as well.

That didn't quite work any other suggestions

Nope sadly. I guess you could try replicating the weapon from scratch, or replacing the images of another weapon with the category that you want.
