1, I don't know how to change the name of the Server (if it's on the client or a server file)

2, The welcome message how to modify it.

The server name is in your client (l10n/lang/data/data.pak/ui/ server_name.xml and serverlist.xml), and the message is somewhere in the server, you need a link to the assembly or try to find it yourself by the displayed message

change the server id, server id´s and string´s can be found inside the l10n ui folder.
Every server id has another name.

The welcome message is mostly hardcoded inside the PlayerEnterWorldService.java
