Updating Mangos Platinum

Hi all,
I have read alot of the threads about updating but I am obviously not smart enought to understand them properly.
I have SDB 0[1].6+v3125+Mangoscript118+jail+honor. This is the one step setup pack.
This revision has many many issues. I am trying to update it to
MaNGOS 3140 + ScriptDev 2 Rev16 + Honor 0[1].61, but I dont know how to do so properly, I can't loose my accounts or characters. I tried to do it, but it overwrote everything, and my backup almost didn't work.
If anyone can tell me how to do the backup properly, step by step and in simple language, that would be very much appreciated.

Hi I had an idea, just want to see if this would work.
If I exported all the character sub items as a sql dump, and the accounts as sql dump. Then set it up as a fresh setup. Once it's up fresh, dump the accounts and character's back on it. Would that work?

I did my main server last night. I made a SQL dump of the whole DB and then of each individual table (of the ones listed as needing to be saved) just as insurance. I also made a CSV backup of each table. I installed the new core and DB and then imported the CSV files to their respective tables. Everything seemed in order except all the quests were listed as failed. No big deal. I also got some "Warnings" which usually were because it added a line of all "0" to the table, which I simply deleted and saved changes.

Here's the list of tables I backed up. (CAVEAT: USE AT YOUR OWN RISK. Test on a test copy of your server first. I only run the server for me so I only had one account to backup. This may not be the best answer if you have multiple accounts. If you have multiple accounts you'll want to add the Mail table as well. Check each table to see if there's any data in it, a restore may not be necessary. ie. I didn't have any pets so the only line in that table was the default line.)
