Which one is better AMD or Intel?

It depends on what model you're getting
Post some of the options you have so we have a better chance of getting a correct answer

But in general, if you want a cheap fast processor, AMD is the way to go
If you want a reliable processor where you can overclock the hell out of it, Intel is the way to go
I'm not saying AMD can't clock, but Intel is generally better at it because if the processor overheats, it just shutdowns your computer to avoid hardware damage
 
the thing is that all my pcs are self-built (except my laptop ^^)... thats why i wanted to see opinions.. Thanks for urs.

Intel. Period.

AMD's have great oc'ing potential but they are rediclous power hogs and heat whores. Intels I7 and even Q/E series processors are great even out of the box or if you want to overclock. Super low power awesome output great potential low heat. Works well with ATI or Nvidia but with AMD they only really work good with ATI (Dragon platform). ESP the new phenom 2's
 
so intel xeon would be the best?

Your doing a server?
Then yes, go with the xeon

But if you want to do both gaming and server, then go for a Core i7
The processor will eat anything you throw at it, and beg for more

But if you want a mid-range processor like Core i7, wait untill Septembre when Intel release Core i5 (codenamed Lynnfield) which is their next 'mid range' processor of the family

Opteron works very good too

xeon still uses 45nm which sucks (Else im unaware of newest release)
