About the only part of that whole idea that is questionable out of reach is replicating what is known as the 'human conscious', which is still surrounded by large amounts of mystery and uncertainty.

Also not to mention, this is going a little on the... 'conspiracy whackjob' side of things, but it is also said that we are technologically actually years ahead of what is shown to the general public and masses. So, even if not in the public masses eye of things we are not quite technologically advanced enough to create such things, perhaps in that timeline and level of advancement we are.

So how do you, or anybody else rather, know that I am not actually a highly advanced bio-engineered artificial intelligence?

According to the solipsism theory, or problem, one's own consciousness is all that can possibly be known to one. For all I know, or all any other conscious being knows, I/that being is the only conscious, sentient being in existence, and since such things are exclusive to solely that experience, it can never be experienced or known by anyone or anything else.
