If you want to run more than one channel (server node) on a single PC you have to use virtual machines. Configure each with a different IP and MAC address. Point each VM to a single Database server (either a physical or virtual machine). If using an external database, the memory and physical requirements for each server will be less. Static configuration for each VM is within that server's local excel spreadsheets. Many of those will be duplicated across server nodes.
Running commercial (non emulator) servers is a very expensive proposition. And to run more than one channel means you have to multiply the servers by the number of channels you have. Most PCs, even the monster Epyc and Xeon servers will be limited by the amount of ram memory you have overall in the host machine. My Threadripper system supports a maximum of 256GB of memory so I am limited to a single server node/channel.
