I think Zaraki either calls out his swords name releasing its power or goes bankai somewhere around manga chapter 310 or so. Remember when he first fought Ichigo he said he wanted to know his swords name, since he is so hardcore on battle ill bet he found it. Reason why he holds back is simple like he stated he loves the heat of battle and dont want it to end quickly.

Everyone seems to have moar power when they're in las noches.
Ichigo can stay in his hollow form longer, chad has both arms released.
I expect Kenpachi to release his sword soons.

It is released (shikai)... he just doesn't know the name of it and due to that can't learn bankai...

Yeah really just read manga 310, gotta wait till 311 to see what happens next though as for now its not looking good at all, kenpachi isnt pissed yet though.
